My New Gluten Free Blog

Hi,

My name is Noreen and I own the Celiac Cakery, a gluten free home bakery, specializing in occasion cakes and treats.  I started the cakery one year ago because I wanted to give gluten free children the opportunity of having a gluten free cake that tasted great and looked just as special as cakes their friends have.

This year, however, has turned out to be about much more than just baking and decorating cakes.

Over the course of the year, I have had some great experiences of watching children's faces when they see their very own gluten free birthday cake and of parent's letting me know how nobody at the party could tell that the cake at the party was gluten free.  I have met so many people at various health fairs and expos and have listened to so many and varied issues relating to the gluten free condition.

Gluten free food gets such a bad rap and when you taste some of the food that is sold for such high prices in the stores, you can understand that.  However, gluten free food can taste just as good as normal food if you know a few tricks of the trade.  After chatting to various clients about their gluten free needs, we decided to hold cooking lessons to give people a bit of control over their own diets.  You don't have to buy what happens to be available in the stores.  You can bake your own bread, your own pizza.  Pasta is easy with gluten free flour and my lasagna is always the most popular dish on the pot luck table.

During these cooking lessons, which are very messy and informal, we all chat about our situations and our solutions and I was asked if I would start a blog to discuss some of the issues we all face and how each of us are unique with our solutions.

So here we are!  This blog is going to be very casual, I will chat about how I am dealing with my teenage son's gluten free diet (does he ever stop eating?), I will give recipes that I have found to be successful consistently and after we have a cooking class (we have one next week) I will talk about what we discussed that night and what new information we have discovered!  I hope you join me in this very exciting and unexpected new venture!
